今日の薬膳料理は、
「冬瓜と鶏スペアリブの煮込み」です。
薬膳には天人合一(てんじんごういつ)という考えがあります。自然界で起こることは同じく人の体の中でも起こりうるという考え方です。
今日もあまりぱっとしない天気ですが、雨が多い季節は体の中にも余分な水分がたまりやすくなります。
今日使った冬瓜は身体の余分な熱や水分を取り、喉の渇きの緩和など体に潤いを与えてくれます。
これからの季節、梅雨時や夏に特におすすめの食材ですよ。
材料 鶏スペアリブ5本(手羽先でも手羽元でも可)、冬瓜(鶏肉と同じくらいの量)、にんじん、ショウガ薄切り
調味料 酒大さじ1、醤油・味醂小さじ1、水300cc
具の付けダレ 醤油・酢・ごま油小さじ1、豆板醤少々
作り方
1.冬瓜は皮をむき2㎝巾に切る。にんじんも同じく。
2.鍋に湯を沸かし冬瓜とにんじんを軽く茹でる。
3.鍋に分量の水と調味料を入れ鶏肉とショウガを入れ火にかけ、沸いたら冬瓜とにんじんを入れ煮汁が半量になるまで弱火でことこと煮込む。
4.仕上げにごま油を入れて完成。
付けダレはお好みで。スープに付けダレを入れて味変してもおいしいです。
