暑い日が続きますね。
トマトには体にたまった熱を取り、汗で失われた潤いを与えて、渇きを癒してくれる効果があります。
薬膳ではその食材が体を冷ますのか温めるかを示す「四性(熱・温・涼・寒)」という考えがあります。
暑い夏には涼や寒に分類される夏野菜や瓜類などを摂るといいのですが、冷え性など元から体が冷えやすい方はサラダなどの生食ではなく加熱したり、体を温める薬味類などをプラスすると体もよろこびますよ。
材料 トマト小1個(8等分のくし形)、卵2個、アスパラガス1本、ネギ・ショウガみじん切り少々
調味料 (卵下味)酒小さじ1、塩ふたつまみ、胡椒少々 (炒め調味料)水大さじ3、酒小さじ1、塩ひとつまみ、オイスターソース小さじ1/2、胡椒少々
作り方
1.フライパンに油大さじ2を入れ、ヘラやフライ返しを使いざっくりかき混ぜながら、半熟まで炒めたら取り出す。
2.ネギ・ショウガとアスパラガスを炒め火が通って来たらトマトと炒め調味料を入れふたをして、沸いたら1分弱火で加熱する。
3.仕上げにごま油を入れて完成。
