サバ2切れ
シメジ、えのき
合わせ調味料
a.香の黒酢ソース大さじ1
醤油小さじ2
水1カップ
b.豆板醤小さじ1/2
ニンニクみじん切り少々
ショウガみじん切り少々
作り方
1.サバに片栗粉大さじ1/2をまぶしつける。
2.フライパンに油大さじ1を入れ、サバを両面焼き、皿に取り出す。
3.フライパンに油小さじ1を入れ調味料bを炒め、調味料aを入れ沸かし、サバときのこを入れ、落としブタをして3分くらい煮汁が半量になるまで煮込む。
4.皿にサバときのこを盛り付け、煮汁に水溶き片栗粉(片栗粉小さじ1:水小さじ2)でトロミを付け、ごま油小さじ1(分量外)を入れサバにかけ完成。
トロミをつける時は火を止めてから水溶き片栗粉を入れ、全体になじませてから火にかけるときれいにトロミが付きます。
