今日の薬膳料理は、
「鯛のバター醤油ソテー」です。
今日はお腹の働きを調え疲労回復効果のある料理です。
梅雨の時期は湿度の影響でむくみがちに。また、お腹は湿に弱く働きが悪くなります。
鯛にはお腹の働きを調え余分な湿を取る効果があります。付け合わせのじゃがいもはお腹の養生に。キヌサヤは湿を取り鯛の薬膳効果を上げてくれます。
脂肪が少なくたんぱく質が多い鯛は、消化吸収しやすく体力が落ちてる方にもおすすめです。
今日はバター醤油で味付けしましたが、脂が気になる方は酒蒸しなどの調理法に変えて料理してください。
材料 鯛切り身1切れ、じゃがいも(2cm角)、茹でキヌサヤ
調味料 醤油・味醂大さじ1、バター10g、黒胡椒少々
作り方
1.キッチンペーパーで鯛の水気をふき、両面に塩胡椒で下味を付ける。
2.じゃがいもはラップをしてレンジで2分加熱する。
3.フライパンに油大さじ1を入れ鯛を両面焼く。
4.残った油を拭き調味料を入れ沸かし、盛り付けた上からかける。
今日は小さめの鯛を輪切りにしたので4面焼きましたが、身だけの切り身なら皮面8割身2割のイメージで焼くとおいしく作れます。
