「薬膳」とは何？
『薬食同源』
〝薬も食物も同じ自然の産物でそれらを食べ健康になること”
毎日の食事で養生し、病気には生薬を加え治療する。これが薬膳の基本的な考えです。
風邪には葛根湯を勧められますが、主薬の葛根(くず)には解熱・筋肉のこわばりを緩める効果があります。
風邪のひき始めにくず湯を飲むのは、葛根湯と同じ考えからです。
抵抗力があれば薬を飲まずに治る。日々の食事で抵抗力のある健康な体を維持する。
その手助けをするのが薬膳です。
今日の減塩薬膳レシピは、
【たらとトマトのピリ辛煮込み(食塩相当量0.75g)】
血を補い疲労回復の効果のあるタラと、潤いを与え肝の働きを助けるトマトの料理です。
材料
タラ1切れ(両面に小麦粉をまぶす)
カットトマト(缶詰)100g
(A)シメジ・玉ねぎ20g、ニンニク、唐辛子
作り方
1.オリーブオイル大さじ1でタラを焼き取り出す。
2.材料(A)を炒めしんなりしたらトマト、酒大さじ1、塩2つまみで味を調えオリーブオイル小さじ1を加える。
3.盛り付け黒胡椒を振りかけ完成。
🟥黒胡椒やニンニク、唐辛子を効かせると更に減塩できますよ。
