「ヤングコーンといんげんの鶏つくね」
今が旬のヤングコーン。缶詰のイメージが強い野菜ですが、この時期だけ出回る生のヤングコーンは香りも風味も格別です。
とうもろこしには利尿作用など湿を取る働きがあり、また、捨ててしまいがちなひげは玉米鬚(ぎょくべいしゅ)と呼ばれる生薬として、むくみ改善などに用いられます。
今日の料理は、湿を取るヤングコーンといんげん。お腹を温め水液代謝の働きを助ける鶏肉を合わせた、湿気の多い季節におすすめの料理です。
材料 鶏ムネひき肉120g、ヤングコーン3本、いんげん3本、かいわれ大根
肉の下味 酒大さじ1、塩ふたつまみ、こしょう少々、片栗粉小さじ1
照り焼きソース 醤油・酒・味醂小さじ2、砂糖小さじ1
作り方
1.ヤングコーンは皮をむき3〜4分塩茹でる。
2.ヤングコーンといんげんは7〜8ミリの角切りにする。
3.ボールに鶏肉と調味料を入れ練り、野菜と合わせ3等分にし、それを平たく伸ばし両面を焼く。
4.鍋に照り焼きソースを沸かし、1/4〜1/5まで煮詰め、つくねにかけ完成。
