今日の薬膳料理は、
「トマトと卵のそうめん」です。
体の熱を取り渇きを癒すトマト。体の熱を取り余分な水分を外に出すきゅうりを使った和えそばのようなそうめんです。
汁気が欲しい方は麺つゆなどお好みで調整してください。
材料 そうめん1束、トマト缶1/2缶(生なら大きめ1個)、溶き卵1個、ネギ・ショウガ・ニンニクみじん切り少々、
調味料 酒小さじ1、醤油・酢小さじ1/2、塩ひとつまみ
仕上げ用 きゅうり千切り、ごま油小さじ1(香り付けの油はオリーブオイルなどお好みで)
作り方
1.フライパンに油小さじ1(分量外)を入れ薬味を炒め、香り火出たらトマトと調味料を入れる。
2.沸いてきたら溶き卵を中心が外に向けて円を書くように流し入れ、卵が固まったらごま油を入れ火を止め、氷水に当てて冷やす。
3.そうめんを茹で、茹で上がったら冷水で洗い、皿に盛りトマトのあんをかけきゅうりを飾る。
