冬は気温が下がり空気は乾燥、水は凍る。人の体も冷えて巡りが悪くなる。
春は寒さが和らぎ、人の体も寒さでこり固まった体が緩み活動的になる。
暖かい空気は上に上がる性質で、人の体では気が上半身に溜まり、イライラやのぼせ、めまいなどの症状が出やすくなります。
季節の養生薬膳では、こう言ったことに気をつけて料理を作っていきます。
今日の減塩薬膳は、
【豚バラ肉とにんじんのサンラー煮込み(食塩相当量0.43g)】
春の疲れを癒し、気の巡りをよくする料理です。辛味・酸味はお好みで。全く入れなくてもおいしいです。
材料 豚バラ肉70g、にんじん・じゃが芋1cm厚さ各50g、小松菜、長葱5cm、生姜みじん切り小さじ1
調味料 A(水300cc、味醂・酢各小さじ2、胡麻油小さじ1.5)、減塩醤油小さじ1、胡椒
作り方
1.小鍋にAと小松菜以外の材料を入れ火にかけ、沸いたら弱火で半量になるまで煮込む。
2.小松菜を入れ、醤油で味を調え、胡椒をたくさん振りかける。
