黒酢風味の炸醤麺(香の黒酢ソースアレンジレシピ58)
材料
中華麺1個
豚ひき肉70g
玉ねぎみじん切り60g
ニンニクみじん切り少々
胡瓜、トマト
合わせ調味料
香の黒酢ソース小さじ2
醤油小さじ1
水大さじ4
水溶き片栗粉
片栗粉小さじ1:水大さじ1
作り方
1.フライパンに油小さじ2を入れ、弱火でひき肉を炒める。
2.肉に火が通ったら、玉ねぎを加え更に炒める。
3.玉ねぎが炒まったら、合わせ調味料を入れ30秒くらい沸かす。
4.一度火を止める。それから水溶き片栗粉を入れ全体になじませる。
5.水溶き片栗粉が全体に行き渡ったら、火をつけ、よくかき混ぜる。
6.仕上げにごま油小さじ1を入れあんの完成。
7.麺を茹で冷水にさらし、皿に盛り付けあんをかけて完成。お好みでラー油をかけてお召し上がりください。
※フライパンでのとろみ付けは必ず火を止めてから作業をしてください。火をつけたままだと、水溶き片栗粉が鍋底に当たり(液面から鍋底までの距離が短いため)ダマになりやすいです。
